Chimichurri Chicken Wings
INGREDIENTS
2 lbs chicken wings
1 c chopped cilantro
1 c chopped parsley
1 diced jalapeno
¼ c diced red onion
½ c olive oil
½ c red wine vinegar
1 lime
1 tbsp roasted garlic
1 tbsp red chili flakes
smoked salt
DIRECTIONS
make chimichurri by combining all of the listed ingredients except for the chicken wings.
use ¾ of the chimichurri to marinade the 2 lbs of chicken wings in a ziplock bag for 2-3 hours
preheat the grill to 400° and grill wings over direct heat
after developing a little char and color on the wings, move over and finish over indirect heat until they reach 175° internal temp
plate the wings and drizzle the reserved chimichurri sauce over the top of the wings
